Master blender Lorena Vásquez crafts Zacapa No. 23 high in the mountains of Guatemala, using first-press sugar cane instead of molasses, like common rums. Zacapa 23 then enjoys a version of the “sistema solera” aging process in which the rum rests in casks that previously held American whiskey, sherry, and Pedro Ximenez wines.

Zacapa Signature Old Fashioned
1.5 oz Zacapa No. 23 Rum
0.25 oz Simple Syrup
1 dash Aromatic Bitters
1 dash Chocolate Bitters
Grapefruit Peel, for garnish
Dark Chocolate, for garnish
METHOD: Combine Zacapa Rum, simple syrup, and bitters into a mixing glass with ice. Stir well and strain into a double Old Fashioned glass. Express grapefruit peel over drink and grate dark chocolate on top.
